DARI AIR HUJAN, LIMBAH JUICE BUAH DAN SAMPAH ITU DIPEROLEH IKAN DAN SAYUR SEGAR, AIR MINUM DAN ETANOL SERTA BIOGAS UNTUK BAHAN BAKAR MASAK

Kopi sebenarnya, yakni adalah kopi yang DIGILING bukan Digunting, tersaji dalam 23 resep seduh ( brewed Coffee) di KencanaOnline Cafe Coffee & Eatery. Terlebih jika biji kopinya tersebut dihasilkan dari budidaya dengan asupan nutrisi organik kompos. Daur ulang limbah organik menjadi Biogas, Bio Elektrik dan Pupuk bagi media tanam padi dalam pot ( sawah portabel), taman vertikal tanaman obat dan hias maupun pot kopi cukup menonjol terlihat di beberapa bagian area kafe ini. Sementara biogas, disamping digunakan bahan bakar masak juga bahan bakar generator listrik bagi penerangan lampu ornament (LED).


Memenuhi sebagian kebutuhan operasi KencanaOnline Cafe Coffee & Eatery berupa gas kompor, ikan, sayur, air minum) dari hasil olah limbah juice, sampah dan limbah, adalah keharusan. Terlebih dengan keberadaan instalasi panen air hujan (rain harvesting) telah dirasakan bagi penyimpanan ikan dalam keadaan hidup (tanpa freezer). Kolam panen air hujan menjadi media hidup ikan, tanpa perlu kulkas/ freezer sebagaimana resto umumnya, Bahkan mutu sayur dan ikan hasil proses organik, menepis kekhawatiran atas resiko dari pestisida bahan pangan. Dan, tak kalah penting, olah sampah jenis organik yang cepat membusuk (perishable) langsung habis sesaat usai masak, telah menekan perkembangbiakan hama (tikus, kecoa).



Lebih jauh dari itu, peranan kompos dari mesin komposter dan biodigester KencanaOnline.Com sejak tahun 2005, kini telah tersebar memupuk puluhan Ha sawah di Ciparay menghasilkan beras dan bekatul organik maupun puluhan Ha kopi di Banjaran, Pangalengan dan Ciwidey. Salah satunya mendukung lahirnya kopi specialities Preanger organik. Dengan begitu, saat pengunjung menikmati sajian kopi dan cookies dari bekatul, sekaligus bisa membayangkan tahapan secangkir kopi sejak bentuk bibit, saat berbuah, proses sangrai (roasting) hingga siap dinikmati diatas meja..


Berbagai pilihan menu kopi disajikan di Kafe ini oleh seorang barista handal. Dari kecakapan dan pengalamannya tersajilah resep V60, Flat bottom, Coffee Latte, Capucinno, kalta wave, Vietnam drip hingga syphon. Bahkan sajian kopi syphon, didahului dengan proses pemanasan air menggunakan etanol limbah buah menggantikan spritus sebelumnya, secara khusus menambah aroma khas buah yang menjadi bahan pembuatan etanolnya. Penggemar kopi ( coffeeholik) dapat memesan seduhan syphon aroma jeruk, mangga, semangka maupun aroma buah kesemek.



Bahan pembuatan etanol buah sendiri adalah limbah Juice buah menggunakan juicer yang difermentasi fakultatif, kemudian di destilasi dalam alat penyulingan (destilator) dengan bahan bakar biogas. Berada di Kafe dan toko yang kental dengan konsep pelestarian lingkungan ini, disamping bisa mendiskusikan aneka produk dan teknologi pengolahan sampah metoda 3 R (Reduce-Reuse-Recycle) juga, makin dikuatkan dengan hadirnya pilihan sajian kopi, makanan dan juice organik serta, tentunya, semua limbah kopi, juice dan makanan di KencanaOnline Cafe Coffee & Eatery diolah menjadi kompos dan energi biogas (*).
